The miracle of fermentation.

In brew­ing, fer­mentable sug­ar and yeast have a sym­bi­ot­ic rela­tion­ship. The yeast eats the fer­mentable sug­ar and spits out alco­hol and car­bon­a­tion, trans­form­ing the sug­ar-water wort into beer. A high­er con­cen­tra­tion of dis­solved sug­ars in wort means there’s more sug­ar to fer­ment, mak­ing the beer high­er in alco­hol. A high­er alco­hol beer is often referred to as “High Grav­i­ty beer”. With­out fer­mentable sug­ar and yeast work­ing togeth­er sym­bi­ot­i­cal­ly, there is no trans­for­ma­tion.
